I love graham crackers and always want to bake them (I’ve been looking at recipes in lots of different baking books), but I haven’t yet. Maybe soon. If you ever go to Hudson, NY, there’s an amazing gourmet shop (Talbott & Arding) that makes THE BEST graham crackers. As for baking by weight, it’s so much easier than pulling out all of the measuring spoons & cups! So much more precise & consistent. I notice myself getting annoyed when I use a recipe without weights!

I've been wanting to take a trip to the Hudson Valley. So much great food and wonderful bookstores. High on my list is the Spotty Dog located in a renovated firehouse. They also have lots of hard cider on tap. (https://www.thespottydog.com/) Excited to add Talbott & Arding to the list. Have you been to Scratch Bakery in South Portland, ME? They, too, have amazing cinnamon sugar graham crackers. (https://www.scratchbakingco.com/sweets)

Do you have a favorite kitchen scale? I just saw a baker utilize a "reverse tare" where she puts the entire container of flour on the scale and then watches the numbers count back as she scoops flour to get the correct amount. Way too complicated for my brain, and also it's not hard to put a little container on the scale!

Our last time in HRV was last March, a quick drive-thru on the way to Middlebury, VT. We stopped for awesome egg sandwiches (can’t remember the name of the place but it was cute) and then to Talbott & Arding (I could’ve bought everything there, but since traveling…). I don’t know The Spotty Dog but it looks really cool, I’ll keep it in-mind if we’re near Hudson. I haven’t had the cinnamon grahams from Scratch, but I’ll be in Portland soon and will get some! My current kitchen scale is an Escali, it lives on the counter as it’s used multiple times a day for making coffee and for baking. Very easy to use, although I wish mine had a higher weight limit for baking (can’t put a large mixing bowl on the scale). But otherwise, no complaints. I don’t recall if I got this one from Amazon or KA Flour.

I think I’ve seen the cookie cookbook on Pamela Klinger Horn’s social media. Do you follow her? She hosts literary events in the Minneapolis area and loves to bake too.

I know her name but thought she was an author. Jim's sister lives near Minneapolis, I see a road trip in my future!

Just followed her on IG, thanks!

That's an interesting change to weights instead of cups and such. Is it about accuracy?
