I’m not much of a mix baker ( I’m primarily a pie and bread baker) but my husband does use mixes and I get to enjoy the results. For brownies, he uses the Ghirardelli mix from Costco, and adds chocolate chips to it—yummy! He also makes several King Arthur mixes (scones, mostly, but he has tried the pretzels) and they have all been winners. My favorite of the King Arthur mixes is the gingerbread mix, which he uses to make ginger cookies—also yummy. He recently tried Trader Joe’s cornbread mix, which was delicious.

I don't trust boxed mixes that you only add water to. I like the ones you add eggs, oil, milk whatever to. That way I feel like I can add the stuff I like, like local eggs or what ever.
